A study has found that consuming reused deep-fried cooking oil may lead to higher levels of neurodegeneration in rats and their offspring, with implications for human health. Repeatedly heating oil destroys healthy components and adds dangerous compounds, potentially leading to a range of illnesses. The research showed elevated liver enzyme levels, altered lipid metabolism, decreased transport of brain omega-3 fatty acid, and neurodegeneration in rats consuming reheated oil and their offspring. The study also highlighted the impact on the liver-gut-brain axis and increased cholesterol and inflammation markers. Additionally, exposure to monosodium glutamate induced further neurological damage in rats reared on reused oil.
