A new study published in Scientific Reports suggests that space-grown food like lettuce and leafy greens may be more susceptible to bacteria like salmonella, raising concerns for deep space exploration missions such as NASA's future manned mission to Mars. Researchers from the University of Delaware used equipment to recreate the weightless environment of the International Space Station and found that lettuce grown in this environment was more likely to have open stomata, leaving the plant susceptible to bacteria. This poses a significant risk for astronauts, and further research is needed to address this issue before space-grown food can be safely consumed in space.
